Weekly Meal Plan

This week my mother-in-law brought oranges back from her Florida vacation. You'll be seeing my orange stock used this week. I usually don't post my breakfast options b/c it usually consists of cereal, poptarts, granola bars etc. We're always to busy for sit down breakfasts. But! I'm going to make some muffins so I'm adding those in b/c I found a great recipe. I wanted to share. Happy planning!!

Breakfast:
Orange Muffins(I'll be omitting the orange extract.)

Orange BBQ Chicken, Rice, Broc
Spaghetti w/ Meatballs & GB
Crockpot Chicken Taco Soup
Soup Beans & Cornbread

Crockpot Chicken Tortilla Soup

Crockpot Chicken Tortilla Soup

1 cup chopped onion
2 garlic cloves-minced
2 chicken breasts
1 cup frozen corn
1 can drained and rinsed black beans
1 ½ tsp cumin
1 tsp Worcester sauce
½ tsp chili powder
¼ tsp taco seasoning
1 cup salsa (or you can use a can of diced tomatoes and green chilis)
4 cups chicken broth
1 TBS diced jalapeños (optional)

Directions: Combine all ingredients in the crock pot. Cook 8 hours on low. Shred chicken. Serve with tortilla chips, shredded cheese, sour cream and cilantro. A squeeze of lime is good in it, too. Also, I usually taste and adjust the seasonings a bit about an hour before eating. Add more spices according to your family's preferences.
