Crockpot Wednesday: The Best Ever Crock Pot Lemon Pepper Chicken

The Best Ever Crock Pot Lemon Pepper Chicken
SERVES 2 -4

Ingredients
4 boneless skinless chicken breasts
1 (10 1/2 ounce) can condensed cream of chicken soup
3/4 cup milk
3/4 cup water
lemon pepper seasoning
vegetable oil cooking spray or olive oil flavored cooking spray
additional water or milk, as necessary
hot cooked rice

Directions
Sprinkle chicken with lemon pepper seasoning to taste on both sides.
Brown (do not cook through) chicken on both sides in a pan coated with the spray Place chicken in crock pot coated with the spray.
In a bowl, mix contents of soup can, water and milk until no longer separated Pour soup mixture over chicken.
Add more milk or water to ensure liquid in crock pot covers chicken Cook chicken over low heat for 6 hours.
To thicken sauce, place in small saucepan, add a cornstarch slurry, and bring to a boil. Serve chicken and sauce over hot cooked rice.

I orginally shared this recipe during my Weekly Meal Plan. Julie one of my readers mentioned the fat content of this recipe. I do agree it is quite high, but I think that is an easy fix. Swap ingredients with low fat versions. 98% fat free soup, skim milk, and trimming the chicken of any fat can easily lower the fat content.

A meal with high fat content isn't too bad once in a while! :) But I've been known to switch out ingredients like you mentioned. Skim milk instead of whole milk, etc.

This sounds like a really easy to prepare, comfort-food type of meal!

Do you have a favorite lemon pepper seasoning. I've not been too pleased with the ones I have tried...the lemon seems to be too artificial. This sounds really delicious, so I want to give it a try. Thanks so much for posting it to Crock Pot Wednesday. I hope to see you there again this week.

Debbie, you're welcome. I like linking up with you I sometimes don't get the chance though. As for your question on the lemon pepper I agree. I don't like the artifical flavor. I've been known to zest a lemon and squeeze a bit of juice into this recipe along with some pepper. I think McCormick is okay, I've used it also. It is hard to find something like the real thing.
