Crock Pot Wednesday: Kickin Creamy Chicken Crockpot Stew

Ingredients:
5 Frozen Chicken Breasts
1 16 ounce jar Salsa Verde
2 cans Black Beans
1 can Sweet Corn (I use a small bag of frozen)
1 can Diced Tomatos with no salt
1 teaspoon Ground Cumin
1 small (3 oz) package of ff cream cheese

Directions:
Place frozen chicken breasts in bottom of slow cooker. Add remaining ingredients except cream cheese. Cook on high for 4-5 hours. At this point, remove about 1/2 the liquid if you want the sauce thick, like a stew. You can leave all the liquid if you want a "soup". Add cream cheese, cook on warm setting for 30 minutes, then stir.

Crockpot Wednesday: The Best Ever Crock Pot Lemon Pepper Chicken

The Best Ever Crock Pot Lemon Pepper Chicken
SERVES 2 -4

Ingredients
4 boneless skinless chicken breasts
1 (10 1/2 ounce) can condensed cream of chicken soup
3/4 cup milk
3/4 cup water
lemon pepper seasoning
vegetable oil cooking spray or olive oil flavored cooking spray
additional water or milk, as necessary
hot cooked rice

Directions
Sprinkle chicken with lemon pepper seasoning to taste on both sides.
Brown (do not cook through) chicken on both sides in a pan coated with the spray Place chicken in crock pot coated with the spray.
In a bowl, mix contents of soup can, water and milk until no longer separated Pour soup mixture over chicken.
Add more milk or water to ensure liquid in crock pot covers chicken Cook chicken over low heat for 6 hours.
To thicken sauce, place in small saucepan, add a cornstarch slurry, and bring to a boil. Serve chicken and sauce over hot cooked rice.

I orginally shared this recipe during my Weekly Meal Plan. Julie one of my readers mentioned the fat content of this recipe. I do agree it is quite high, but I think that is an easy fix. Swap ingredients with low fat versions. 98% fat free soup, skim milk, and trimming the chicken of any fat can easily lower the fat content.

Weekly Meal Plan





First let me welcome all my new followers from the wonderfully rewarding Friday Follow! I pray each of you have had a great weekend. We've done well here a lot of lazy lounging and organizing. Well folks its another week so time for another meal plan! I want to apologize to my readers for missing Slow Cooker Wednesday. I'll do my best to post this Wednesday. Okay ladies lets meal plan!

Recipe Swap: Crock Pot 15 Bean Soup




Crock Pot 15 Bean Soup
1 lb bag 15 Bean Soup (Such as Cajun or Ham flavored from Hurst's HamBeens Brand)
8 cups Water
1 15 oz Can Diced Tomatoes
1 Chopped Onion
2 Cloves Garlic, minced
1-2 lbs Polish Sausage, diced
1 cup 5 Minute Rice

Pour dry beans into a large Crockpot cover with water add onions, garlic, tomatoes and cook on high 4 hours. Turn Crockpot to low. Mix in Rice, Polish Sausage, and Flavor packet if desired. Allow soup to thicken for another hour before serving.

Crockpot Wednesday: Chili

Slow Cooker Chili Recipe

½ day | 20 min prep

SERVES 10

2 lbs ground round
2 (16 ounce) cans kidney beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
2 onions, chopped
1 green bell pepper, chopped
4 cloves garlic, minced
2 tablespoons chili powder
2 teaspoons salt
1 teaspoon pepper
cayenne pepper (I use 1/4 t.)
shredded cheddar cheese
Cook ground beef in a skillet until browned; drain off fat.
Pour into a slow cooker.
Add the next 9 ingredients.
Cover and cook on low for 6-8 hours.
Ladle chili into individual serving bowls; Sprinkle with cheddar cheese.

Weekly Meal Plan Christmas Style




Weekly Meal Plan:
Crock Pot Potato Chowder & Rolls
Cheesy Meatball Subs & Chips
Venison Salisbury Steaks, Mashed Potatoes, & Green Beans (Both sides will be doubled for Christmas Dinner!)

Christmas Eve we'll be traveling to be with family. Here are the dishes I'll be bringing!

Weekly Meal Plan & Happy Thanksgiving!





Take out (Busy day tomorrow at the Hem/Onc Clinic)
Slow Cooker Beef Stew
Spaghetti & Meat Sauce
Thanksgiving Day @ the in-laws! I'll be in charge of bringing the Ranch Salad.

Friday I'll be cooking our Thanksgiving and this is my menu for my family.
Mr. Gobbles (aka a Turkey brined with love Alton Brown style.)
Ore-Ida's Steam n' Mash Potatoes(Yes I'm cheating how could I?)
Gravy
Ham (I usually pick up a small thick sliced package of ham no more then a pound and I add a can of pinapple juice and brown sugar mixed over then bake.)
Stove-Top Stuffing(I'm a slave to my box. I don't trust other stuffings! lol)
Turkey pieces & Dumplins
Green Beans (Fresh from the garden then canned at home. Very thankful for these!)
Broccoli Casserole
Mac n Chz
Rolls

Dessert
Moma's Banana Pudding
Kissed Peanut Butter Cookies

Weekly Meal Plan





Hello ladies and welcome to November! I sincerely hope October treated you well with very little tricks. I've already gotten alot of Christmas shopping done and for that I'm thankful that November will be a great month full of reasons to be thankful for the blessed Christmas to come. The Holiday Season is truly upon us. I hope you will visit my blog for an up coming giveaway that will help you fill your stockings. As always I'll be sharing giveaways from must read bloggers. Recipes: Italian Crock Pot Roast

Hello gals, I'm back with another Slow Cooker recipe. I found this dish over at Recipezaar. You can print it here or click the link below to add it to your Recipezaar cookbook. Please note that in my recipe I added a couple of garnishes.

Italian Crock Pot Roast

½ day | 20 min prep

SERVES 4 -6

3 lbs chuck or round roast, salt and peppered
1 cup cubed celery
1 cup cubed onion
1 cup cubed carrot
8 garlic cloves, halved
1/2 cup chopped parsley
2 bay leaves
1 (6 ounce) can tomato paste
1 (10 ounce) can beef stock
3 tablespoons red wine vinegar
3 tablespoons Worcestershire sauce
1 tablespoon sugar
Mozzarella Cheese or Parmesan Cheese (optional)
4 Servings of cooked spaghetti (optional)
Place veggies in crock pot.
Pierce beef, from top, 2" deep, eight times.
Shove a garlic clove half and parsley into each slit.

Add beef to pot.
Mix remaining ingredients

Cook on low heat for 8 hours.

The Review:
My family really enjoyed this, I was trying to copycat Johnny Carinos Italian Pot Roast. This is not the same but good. I wasn't as pleased as I was hoping. This dish has a sweetness to it and I'm not big on beef being sweet. I'm more of a savory girl when it comes to beef. Chicken, Pork, even Fish can be sweet but not Beef. So that might have been a personal issue. I would not let that keep you from trying this though b/c it introduces such healthy flavorful goodness to your children's palette. I put it over spaghetti and added mozzeralla to the top. My kids thought they were getting spaghetti and they loved it. If you try this dish and enjoy it please comment and let me know. Crockpot Chicken Tortilla Soup

Crockpot Chicken Tortilla Soup

1 cup chopped onion
2 garlic cloves-minced
2 chicken breasts
1 cup frozen corn
1 can drained and rinsed black beans
1 ½ tsp cumin
1 tsp Worcester sauce
½ tsp chili powder
¼ tsp taco seasoning
1 cup salsa (or you can use a can of diced tomatoes and green chilis)
4 cups chicken broth
1 TBS diced jalapeƱos (optional)

Directions: Combine all ingredients in the crock pot. Cook 8 hours on low. Shred chicken. Serve with tortilla chips, shredded cheese, sour cream and cilantro. A squeeze of lime is good in it, too. Also, I usually taste and adjust the seasonings a bit about an hour before eating. Add more spices according to your family's preferences.
