Weekly Meal Plan: Happy Fall Break!





Fall break is here for us which means no lunch plan this week. We’ll be flying by the seat of our pajamas! We intend on spending the week snuggling that is until the weekend. My husband and I will be off to celebrate our 11 year anniversary. I hope everyone has a great week. I know I will!

Let’s plan it!

Dinner:
Clam Chowder and Crusty Bread
Crock Pot Chili and Peanut Butter Sandwiches
Mini Meatloaves, Mashed Taters and Corn
Steak, Baked Potatoes, and Salad (Anniversary Dinner)
Leftover Buffet

While on the quest for new soup ideas I came across this great list of
50 quick and easy soups! You can find simple instructions for base recipes that you build on to make brand new soups. Sift through and you’ll find the Clam Chowder recipe I’m going to be trying this week. If you try some of these let me know how they turn out.

Weekly Meal Plan



We had a lazy weekend. I visited with my mother Saturday afternoon and we spent Sunday piled up together. My daughter and I finished her homework awhile ago and we have logged in 180 minutes of reading this week. I also have two giveaways you might be interested. I also have been working on a Meal Planning tutorial and I have an opinion piece I’m finishing up. I feel pretty accomplished. I’m ready for the new week. I just need to know what we will be eating.

So let’s plan…

Weekly Meal Plan: Tomato Love

Last week was pretty rough, but I am moving forward. Thank you for the prayers and understanding!

This week we have a couple of appointments so we will most likely be grabbing something quick. This got me thinking, quick does not have to mean something wrapped in cheese paper. So I will be posting some speedy options that are sure to please after a long day at the doctor’s office.

Burrito BLT Wraps
Plump Garden Tomatoes filled with Chicken Salad
Tomato Bruschetta with Basil & Mozzarella Cheese
Bobby's Baked Tilapia, Rice, & Corn Nibblers
Logan County Burgers & Fries

Weekly Meal Plan

What a great weekend we had celebrating my daughter's birth. I have to share a photo of the amazing cake my friend Crystal made.



We didn’t really want to cut it. We just wanted to look at it. I even joked about charging admission for the 3D beach I had on my kitchen table. Hey, IMAX is doing it!

Now that her birthday is behind us lets blog. Of course I’m all about the easy so this week I’m pulling the Crock Pot back out and I’m going to do a couple of DIY meals. Remember I usually only post about 4-5 meals and that is because we do left over buffet at the end of the week. I usually cook enough for two meals and freeze what we don’t eat.

-Crock Pot Pinto Beans & Cornbread
- DIY Bake Potato Bar
-Grilled Chicken Salad with Roasted Red Pepper dressing
-DIY Wraps (Lay out cold tortillas, cold cuts, cheeses, ranch dressing or mustard, lettuces & tomatoes and build your own wrap!

We were also very fortunate to have a lot of veggies left over from the veggie tray and I’ll be freezing the peppers, celery, tomatoes, broccoli and cauliflower to use in soups and stews later.
